Roasted Dijon Potatoes

2 baking potatoes, cut into small pieces

1/2 Yellow Onion, diced

2 Cloves of Garlic, diced

1/4 cup olive oil

1 tbl Dijon mustard

Salt and Pepper to taste

1. Set Oven to 375 Degrees

2. Place all ingredients in bag or sealed container and shake until potatoes are well coated

3. Place in baking dish and bake for 35-40 minutes

As I may have previously mentioned, I’ll be cooking for 1 for the time being, so the recipes may stay a bit simpler. With that in mind, this dish is perfect.  It takes hardly any time to prepare, and they taste fantastic. It combines some of my favorite flavors and food types into one glorious dish.  The original recipe uses honey, but I preferred the added tang of a little bit of garlic.  Now I eyeballed the olive oil and mustard, so I won’t stand by those measurements, but as long as all of the potato chunks are well coated you should be fine.  I recommend this to anyone who needs a quick and easy side dish.
